Spicy African Chicken In Peanut Sauce

Lighten up your recipe with Mighty Nut

I received a chance to review Mighty Nut Powdered Peanut Butter and I was very delighted to do this review.  For years, I wanted to make an African stew with peanut butter but most of the recipes are very caloric in nature. When I heard about this product, I was excited to try out the recipes I have longed to do for many years.

Mighty Nut is a new powdered peanut butter produced by Peanut Butter & Company. They take the peanuts press them and remove most the fat, and what you get is the fiber, protein and the peanut butter taste with less calories. Mighty Nut has 45 calories per serving(2 tablespoons) with 1.5 grams of fat and 6 grams of protein. You can put the powder in smoothies, yogurt, oatmeal, and any recipe that requires peanut butter. They also come in four flavors, regular, vanilla, chocolate, and chia and flaxseed.

If you would like to make the recipe above, go to Spicy Hot African Chicken With Spinach site. If you follow the recipe, watch out for a few things. It omits the second add of the water and it also forgets for you to add the curry, which of course, I forgot. I felt something was missing and I couldn't put my finger on it until I went back and reread the recipe. The curry definitely gives it that extra kick. What I like about the Mighty Nut peanut butter, it helps to thicken up the recipe especially if you add too much water, no cornstarch needed. It was really good even without the curry but I can't wait to eat it tomorrow because I added curry after discovering my mistake.

I can't wait to try this with another recipe and of course I will be reviewing it here. I'm thinking of something Asian or South American, decisions, I love it.
