Salmon Honey Mustard Burger With Kale


I wanted a burger on Sunday but I didn't have any ground beef in the fridge but I did have a can of salmon, so I made salmon burgers.  I got the recipe from Cooking Light but I didn't use cilantro or lime the recipe called for.  Instead of lettuce because I didn't have any, I used kale and tomatoes from my garden.  A few kale leaves are still on the stalk because we haven't had a hard freeze in Chicago. 

salmon-honey-mustard-burgerMy favorite spicy mayonnaise was out so I decided to put Paul Newman's Lite Honey Mustard dressing.  It was healthier and just as delicious option for my spicy mayo topping.  The Lite Honey Mustard Dressing has 70 calories for per serving(2 tablespoons) with only 4 grams a fat.  The spicy mayo I usually buy has 110 calories per serving or one tablespoon.
