Catfish Stew and Workout Wednesdays

My parents are southerns and I grew up eating food from that region. My mom would make southern fried chicken and my dad loved to make fried catfish.  Even with a diet of fried foods, we didn't eat it everyday, my siblings and I didn't gain weight. I think it was because we grew up pre cable and pre electronic games. Our games were outdoors, playing hiding and seek, jumping rope and climbing trees. We played outdoors and when the street lights came on, that meant it was time to come inside.

Another reason we did not have a weight problem, home cooked meals were a given and fast food was a treat. Both of my parents cooked, so it wasn't a problem for my mom because she also had a 9 - 5 job. We grew up on stews and a lot of our dessert was jello and canned peaches, which I can't stand because we overdosed on it.  However, I really need to revisit eating jello and canned peaches because those are healthier dessert choices.

When I met my husband, he introduced me to fish cooked into a sauce. I love cooking my catfish that way now but I still love my deep fried catfish, but as a treat. If you like catfish, try my catfish stew.



1 pound of catfish cut into steaks
1 can of diced tomatoes
1 tablespoon of garlic
1 onion
1 large carrot diced
4 to 6 cups of spinach or Swiss chard torn
Habanero pepper is optional
 2 cups of water
Salt to taste

Add all the ingredients, except for the fish, in a Dutch oven and cook for 20 minutes, add your catfish and cook another  15 to 20 minutes. Serves 4 to 6 people.  For more of a Louisiana, African and Island style of eating, add the stew over rice.
