Collard Green Wraps

I made another delicious meal from the garden last week and I decided to try my hand at making wraps from collard greens.  I got the idea from another blogger, Urban Naturale , but I didn't use her filling because it was vegetarian.  I wanted "meat" inside my wraps.  

I used the filling from the recipe I cooked and highlighted earlier - Sukuma Wiki.  Since I loved how the meat tasted with the collard greens, I thought it would make a great filling for the collard green wrap.  I eliminated the chopped up collards in the recipe since I was using it as the wrap, and I didn't have beef but ground turkey. The recipe calls for a lot of interesting spices, such as turmeric, coriander, cinnamon, and ground ginger. I wouldn't have ever thought of adding those spices to ground turkey or beef. 

YouTube videos are great for learning new techniques, so I found a great video for making wraps from collards.  She steamed the collards between 30 seconds to 1 minute and anything beyond that would make it too soft for a wrap.  I guess you can eat the leaf raw but it makes it too bitter in my opinion.  Check out the how to video here.

  3. Great idea! I love getting food fresh from my garden. I haven't tried wraps with anything other than flatbread or tortillas but I really need to get around to trying them with romaine lettuce. #wowlinkup

  7. My girlfriend is making pastry pouches stuffed with kale, collard greens, cheese and veggie beef crumbles as we speak. The kale and collard greens were right out of our garden. I juice a lot and use collard greens when juicing as well. Great post.
