A Fast Breakfast For Moms And Dads On The Go

  

I saw this recipe on the Delicious Dietitian blog which I follow.  A few of my boot campers love this recipe and I want to share it with my frugal readers.  The Delicious Dietitian calls it an egg in a hole but one of my older fellow bloggers said they used to call this breakfast Betty Grables, named after the actress.  She thinks it's named that because Grable made it in one of her movies.

Try to make this recipe for you or your family because it starts your day with plenty of protein and complex carbohydrates, and it's a quick meal to make.  If you are watching your cholesterol make it with egg whites or an egg substitute.

Ingredients

  • 2  slices  whole-wheat bread
  • 1/2   tablespoon  butter, softened
  • 2  large eggs 
  • kosher salt and pepper                                                   
  • Non-fat cooking spray
  • 1  cup berries (such as blueberries, raspberries, or blackberries)
  • 1  cup Greek yogurt

  5. My grandfather used to make this for me and it's something I've always kept in my breakfast rotation. I'd forgotten about it recently--I know what's for breakfast tomorrow!

  6. I used to eat it quite a bit at a young age. I should start making these again. My family calls it "Bird in a Nest"
